Brine Recipe

water, cold     5gal
sugar               4oz
salt                  1 pound
green sichuan peppercorn 2 oz


In a pot combine salt and 1 qt of water.  Heat just enough to dissolve the salt. Add salt mixture to the cold water and mix thoroughly. Make sure brine is properly cooled before using.  Brine for 12 hours.
